The grapes were hand picked and crushed to our eight tonne open top stainless steel fermenters. The natural or wild yeasts present on the grape skins were allowed to initiate the sugar fermentation. Cultured winery yeasts were then added to complete this fermentation. Fermentation and cap/skin management was controlled by the Yalumba designed cap plunger.

Yalumba The Scribbler 2010 opens with a lift of raspberries, sweet spices and licorice followed by the fresh aromatics of herbs and crushed plums. This is a beautifully polished wine of medium to full body. The Cabernet Sauvignon structure defines the palate with the Shiraz cascading generously through the middle.
92 points - "Cracking example of Shiraz Cab and in 2010 it looks like medium bodied is all the rage. It smells of blackcurrant and plum, dried herbs, and something earthy and twiggy, savoury almost. I like the nose, it’s inviting and intriguing. The palate delivers enormous amounts of red and black berry flavour, hints of oak char and a spicy backbone. There more than enough persistence and it’s tapered with fine tannins.
