    Bondar's sophomore Fiano release is again sourced from Ben Lacey's vineyard in Seaview (McLaren Vale). The vines are 6-years-old, grafted onto 25-year-old Chardonnay rootstocks rooted in shallow dark Biscay clay over limestone. Lightly whole bunch pressed, the lion's share went into a single ceramic egg and a small stainless tank for (natural) fermentation. One small bin (around 500 kg) was kept separate for fermentation on its skins.
