A hot and dry vintage meant careful selection of only the finest fruit. Fruit was destemmed allowing only whole berries to be pumped directly into the fermenters. Winemaking was carefully managed using a combination of "open pots" with hand plunging and static fermenters. Colour and flavour extraction was meticulously managed through regular sighting and tasting of the wine. The wine was aged on new and seasoned French oak for a period of eight months before parcels were blended to assemble the final wine.
