Product Description

A first for Ravensworth, after years of scouring for the right climate to grow this undeniable king of red wine they found some in nearby Young at the Grove Estate.
A wine of complexity, made in a very hands off fashion (not that they do much more to the other wines) long, long maceration of skins, use of only seasoned oak and no additions other than the required pinch of sulphur dioxide to preserve the wine and then zero filtration. Try it now, a savoury wine with typical rose petal aromas with morello cherry and an intense tannin profile.


"The fruit is sourced from Hilltops, outside of the home vineyard and local sources from which winemaker Bryan Martin plies his trade in Canberra District. The wine spends a serious length of time on skins, 10 weeks, before hitting old barrels for 10 months. From experience, I tend to think that extended skin maceration and low or no new oak work best for fine nebbiolo. A lot of Australian nebbiolo doesn’t seem to shake the ripeness factor or find enough tannin, at times. I think that seems to be changing though. Good evidence here.


Distinctly floral, layered with red fruit and a slight gamey twist. Quite rich palate with a long, fine tannic finish. Early days yet as these wines tend to show themselves over a long time. 


FOOD
Are you kidding, Nebb’s are like food mecca for dishes involving game and savoury, umami rich food. Slow cooked hare, truffle infused pasta, roasted cauliflower with a black garlic sauce. Wild mushroom risotto with a splash of the wine in the rice. Think rustic, full flavoured gamey dishes and partner up with a Nebb.


"Nebbiolo from Hilltops, NSW. Source of Grove Estate. Whole berry ferments, in wooden vats, spend eight months on skins. Then pressed out and into Stockinger, large format oak for 14 months. Serious handling.
