The style of Cabernet Merlot we are making at Fraser Gallop Estate is a wine that has greater freshness from a short barrel maturation and good concentration of flavour that comes naturally from dry grown Cabernet Sauvignon in the blend. The result is a sumptuous blend that drinks well early however can be cellared for a short period of 4-6 years. The blending of Cabernet Sauvignon and Merlot has been proven in Margaret River's short history and elsewhere, such as Bordeaux where the blend originated. The varieties work so well because structural tannins of Cabernet are tamed by the inherent mid-palate richness and softness of the Merlot grap.
An attractive looking wine in the glass with bright crimson and ruby red hues with good density of colour.The first impression on the nose is one of red fruits like plum, mulberry and even cranberry with some floral notes of violets, also the trademark Wilyabrup Cabernet "dustiness" comes across and subtle oak gives it some complexity. Chinese dried plums are one descriptor that also fits well in this.
The wine itself is soft and approachable with juicy plum and pomegranate flavours. The tannins are quite grainy and persistent similar to cranberry juice. The oak in this wine definitely sits in the background allowing the fruit to shine and the acidity and alcohol levels are nicely balanced in the wine, making it very easy to drink.
Amazing that wines of this quality can be available for under twenty dollars. Mulberry, cherry, chocolate and vanilla with a gentle perfume of bay leaf. Ripe and fleshy with milk chocolate coated berries, round grainy tannin and lovely balance throughout.
