    One of the Barossa's greatest gifts is its unique collection of fortified port and sherry style wines. This 30 year old (average age) pedro ximinez is sensational, essentially an amontillado sherry with emerging nutty, caramel, apricot and raisin characters, bergamot and racy acidity remaining.     A long and very tight finish. Delicious wine, and will improve (quite a lot I think) with a little sleep in the cellar! Is a really good and very interesting wine that will develop into something even more in 3-5 years.
